I’m only referring to the recipe, not the actual animal when I use the term “quick”. π This was made with the leftovers from a supermarket rotisserie chicken. The meat was skinned and deboned, cut into cubes, mixed with coarsely chopped celery, mayonnaise to moisten, and salt and pepper. Grab a roll and pile the chicken mixture on, pour some iced tea, and there is lunch! (It’s also good on lettuce if you’re looking to reduce the carb content of your meal.)
